March Is National Noodle Month

March is well known for National Nutrition Month. It's a great time to reset and look at food safety, eating healthy and improving physical activities. It's also National Noodle Month! According to the national day calendar information, the first mention of noodles happened around the third century A.D. in China. That's a long time for noodles in the world! Noodle dishes don't always have to be spaghetti and meatballs, branch out and see all the different noodle recipes you can find. Here's a dressed up ramen noodle recipe that will be sure to make the taste buds happy! Enjoy!

Garlic Ginger Ramen with Beef

Ingredients

½ pound lean ground beef (15% fat or less)
2 cups water
2 packages oriental flavor instant ramen-style noodles, broken into small pieces
16 ounces frozen vegetables (try stir-fry or any type)
¼ cup chopped onion (any type) or ½ teaspoon onion powder
1 Tablespoon fresh ginger or ¼ teaspoon ground ginger
2 cloves garlic, minced or ½ teaspoon garlic powder 


Directions

Wash hands with soap and water. Rinse fresh vegetables under running water before preparing. In a large skillet over medium-high heat (350 degrees F in an electric skillet), brown ground beef. Drain fat from the skillet (see *Notes). Add water and ONE seasoning packet to cooked beef and mix well. Add vegetables, onion, ginger and garlic. Bring to a boil over high heat. Add ramen noodles, reduce heat to low, and simmer 3 to 5 minutes until vegetables are tender, stirring occasionally. Refrigerate leftovers within 2 hours. Thanks to Food Hero for this recipe.


*Notes

  • Try adding more seasonings such as red pepper flakes, cayenne pepper, jalapeno pepper or cilantro.
  • No ground beef? Try ground chicken, turkey or pork. You can also use 8 ounces pressed and crumbled tofu or 1 cup of cooked beans.
  • No frozen vegetables? Try canned or fresh, such as snap peas, edamame, mushrooms or radishes.
  • Pour fat from cooked meat into a metal container. Let it cool, then dispose of it in the garbage can.
