Get Ready for National Peach Month

Let's celebrate all the goodness of peaches in the month of August. Peaches come in different colors and acidity. You can choose from white, yellow or orange; and remember the white is less acidic than the yellow or orange. They are full of vitamin C and vitamin A. Not only are they delicious, but nutritious too.

Peaches are not just used in desserts. You can make a peach salsa, fruity chicken salad or muffins! They are in season from June to the end of August. Stop by your local produce stand or tailgate market to pick up some freshly, picked peaches for this easy, healthy Pocket Fruit Pie recipe. Enjoy!

Makes 4 servings

Serving Size: 1 pie

Ingredients
  • 4 whole-wheat tortillas
  • 1 large apple or 2 medium peaches
  • 1/4 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 1/8 teaspoon nutmeg
  • 2 tablespoons fat-free milk
  • Sugar (optional)

Directions
  1. Wash hands and surfaces.
  2. Preheat oven to 350°F.
  3. Warm tortillas in microwave or oven to make them easier to handle.
  4. Peel and chop fruit into small pieces.
  5. Place 1/4 of the fruit on each tortilla.
  6. In a small bowl, stir together brown sugar, cinnamon, and nutmeg. Sprinkle over fruit.
  7. Roll up the tortillas with the fruit.
  8. Place on an ungreased baking sheet and make small slashes to allow steam to escape. Brush with milk and sprinkle with additional sugar if desired.
  9. Bake for 8-12 minutes or until lightly brown.
  10. Serve warm or cold.
  11. Refrigerate leftovers immediately.
