Summer is upon us, and so is fresh fruit and vegetables! June has been known as National Fresh Fruit and Vegetable Month since 1991. Since half of our plates for each meal should be fruits and veggies, this is a great time to make sure they are! Your local tailgate market or produce stand should be starting to yield local produce for sale. Be sure to check out this website to see when local fruits and veggies are available. June is also National Dairy Month and has been since 1937 as a way to promote dairy products. Dairy provides calcium for our bones and protein for our muscles.
Let's combine these two and look at this Easy Fruit Salad from NC EFNEP! This cool treat will likely be a summer favorite! Bonus points if you include local fresh fruits! Enjoy!
Easy Fruit Salad
Ingredients- 1 (20-ounce) can pineapple chunks in juice, drained
- 1 (15-ounce) can fruit cocktail in juice, drained
- 2 small bananas, sliced
- 1 (8-ounce) low-fat yogurt (try vanilla, lemon or any other flavor)
- Drain pineapple chunks and fruit cocktail.
- Wash, peel, and slice bananas.
- Mix fruits and yogurt together.
- Cover and chill until ready to serve.
- 1 cup grapes, seedless, halved
- 2 cups cantaloupe, cut into bite-size pieces
- 1 cup strawberries, quartered
- 1 cup apple, cut into bite-size piecesBe sure to refrigerate any leftovers as soon as possible.
