kale in a pasta dishI’ve never been a fan of kale. I wasn’t embarrassed to let people know. Heck, I was most likely in the majority. I did know that kale contains alot of nutritional value, and if you belong to a CSA, like I do, you will be 99.99% sure you will receive kale in your share. Probably more than once.

I didn’t want this nutritional green to pass me by. I tried several recipes, all good, but nothing I would take to a family potluck. I even massaged kale for one dish. Who can say that? Then, I discovered a trick that parents do with their toddlers or teenagers. I learned to hide kale in dishes. My goto is pasta dishes.

I chop the kale in pieces, cook the pasta, and with 2 minutes remaining to cook the pasta, I add the chopped kale. Voila! Now along with my favorite vegetables..tomatoes, eggplant, peppers, I enjoy this nutritional green in pasta dishes. And it does add a nice dark green color to the mix.

I even toyed with the thought of freezing some kale to add to my chili this winter season. Nah, that was a bit of a stretch, but it won’t stop me from continuing to add kale to pasta dishes. I am a Kale Convert! Go Kale!

There are many benefits from being a member of a Community Supported Agriculture. I won’t go into details about them all, but my top 2 are:

  1. You are forced to eat fresh food that is GOOD for you.
  2. You get to try some really neat unique stuff.
