A Winter Snack

Pecans are in season the months of November and December here in North Carolina! While you can get them all year round, now is the time to use them in all the recipes! During a good producing year, North Carolina can produce as much as 5-6 million pounds of pecans! That could be used in a LOT of pecan pies! This yummy treat has anti-inflammatory properties as well as supports your immune system. The following recipe pairs it with chocolate and dried raspberries and is sure to be a hit with everyone. No-Bake Pecan and Dried Raspberry Bark


Ingredients


  • 1/2 cup pecan halves
  • 9 oz of chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons dehydrated raspberries (can't find raspberries? try strawberries or blueberries!)

Directions

Line a small baking sheet with parchment paper. In a microwave-safe bowl, add chocolate chips and coconut oil. Heat in 20-second intervals, stirring in between until melted. Pour pecans into the melted chocolate and spread across the lined baking sheet. Sprinkle some dehydrated raspberries on top and place in the fridge or freezer for 20-30 minutes until firm.
