National Potato Month

September is known for a few things, but we're here to talk about National Potato Month! Potatoes have several healthy nutrients. They are high in fiber and potassium. They have several different vitamins and minerals, including Vitamin C. A regular size potato with skin contains a little over 150 calories, and almost no fat! All the fat that we consume with potatoes, come from all the extra things we add to them. Here is a potato recipe that will be sure to be a great side dish on the table!

Potato Pals


Ingredients

1 pound potatoes, cut in 1-inch pieces

1 Tablespoon vegetable oil

½ teaspoon salt

½ teaspoon garlic powder or 2 cloves garlic, minced

Directions




Wash hands with soap and water.

Preheat oven to 400 degrees F.  Lightly grease a large baking sheet.

In a large bowl, stir together all ingredients.

Spread potatoes on the baking sheet, leaving space between pieces.

Roast until potatoes are soft, about 20 minutes. Stir a couple of times while roasting.

Refrigerate leftovers within 2 hours.


Notes

  • Try adding more seasonings such as thyme, paprika or cracked black pepper
  • Try adding cilantro on top for more flavor.
