Get Ready for Back To School Lunch

School is quickly approaching, so now is a great time to gather up easy lunch recipes for the kiddos. This Chicken and Fruit recipe is so easy to throw together, and makes more than one serving. You can personalize with your favorite fruit so everyone will want to pack it in their lunches. This goes well as a sandwich, in pita bread, wrapped up in a tortilla shell, in a piece of lettuce, or just in a bowl and served with crackers. Don't forget to pack this with an ice pack so it will be safe to eat by lunch. Enjoy!

Chicken and Fruit Salad

Ingredients

  • 3 cups cooked chicken, chopped
  • 1 (20 – ounce) can pineapple chunks in juice, drained well
  • 1 (11-ounce) can mandarin oranges, in 100% fruit juice, drained
  • 3/4 cup chopped celery
  • 1 cup halved seedless grapes
  • 1/4 cup low-fat mayonnaise
  • 1/4 teaspoon black pepper
  • 8 large lettuce leaves, bread, pita, tortilla shells, crackers

Directions

  1. In a large bowl, mix gently chicken, pineapple chunks, oranges, celery, and grapes.
  2. In a separate bowl, mix low-fat mayonnaise and black pepper.
  3. Gently stir mayonnaise into chicken mixture,
  4. Cover, and chill in the refrigerator.
  5. To serve, scoop 2/3 cup of chicken salad onto a lettuce leaf.
  6. Return all leftovers to the refrigerator in 2 hours.
