With the beginning of summer upon us, it's a great time to find recipes for all the fresh fruits and vegetables that are here! You can pull from your own garden, subscribe to a local CSA box, visit a tailgate market or a local produce stand. June has been known as National Fresh Fruit and Vegetable Month since 1991. Since half of our plates for each meal should be fruits and veggies, this is a great time to make sure they are! Be sure to check out this website to see when local fruits and veggies are available.

Wash hands with soap and water. Rinse or scrub fresh vegetables under running water before preparing. Combine all the ingredients together in a bowl. Form vegetable mixture into small flat patties. Heat 1 Tablespoon oil in a skillet. Cook patties on both sides over medium heat for about 8 minutes. (You can also bake them on parchment paper on a cookie sheet at 400 degrees for 10 min each side.) Refrigerate leftovers within 2 hours.
Notes
Try using sweet potatoes, green pepper, or winter squash in place of zucchini. Serve with a spoonful of plain yogurt or sour cream and a sprinkle of microgreens on top. This recipe is from Food Hero!
