Spinach is in season this month and is a flexible food to include in your diet. It is rich in iron, which is good for your blood, and in Vitamin K, which helps wounds heal and may help to keep your bones healthy. 

Spinach can be eaten raw in salads or sandwiches; blended and added to smoothies or dips; cooked into soups, sauces, and casseroles; or cooked and eaten as a side dish!

Spinach might develop a metallic taste if cooked for too long, and it could lose more nutrients when boiled. Instead, try sautéing, microwaving, or “wilting” your spinach. To wilt spinach, cook it with a small amount of water until all the leaves look slightly wilted.
